For the second week in a row I am posting a recipe where one of the main ingredients is something we pulled from our garden. We’ve had a healthy supply of zucchini so far and needed another way to use some. Enter shrimp and zucchini tacos.
My wife got the idea from this recipe and improvised. If you are interested in our version here is what you just need to sauté a zucchini. When the zucchini is ready add a bag of shrimp, chili powder to taste and the juice of one lime.
We tried these tacos with both cheddar and cottage cheese. I enjoyed both. You can’t go wrong either way!
