Nutrition for Runners: Beef and Sun Dried Tomato Flatbread Pizza

  
I’ve been slacking on these posts lately but today I got around to trying something new that was worth posting. This is my latest attemp at making a recipe from the Runner’s World Athlete’s Palate Cookbook. For any runners who are interested in healthier nutrition options I would recommend this book. I got it for Christmas two years ago and I still go back to it.

I decided to try this one tonight because it was the one pizza recipe in the book that I had not yet tried and I figured that anything involving back steak had to be good. 

This recipe was really easy to make. I prepared it while my two year old was watching Lady and the Tramp on DVD without her noticing I was in and out of the house to grill the steak. If you are interested in this recipe you can find it on pp. 150-151 of the book. 

I made one alteration to the recipe by using green onions instead of roasted shallots. I think the green onions worked just fine.  My wife and my two year old certainly did not complain. I definitely plan to make this recipe again. 

Also, if you are a craft beer fan like I am I will mention that a pale ale paired well with the meal…

  

Nutrition for Runners: Creamy Vegetable Curry

IMG_1755Tonight’s recipe is my second effort at making a vegan meal from the Oh She Glows Cookbook. This one can be found on p.183 of the book.

One tip I have for anyone trying this recipe, if you forget to soak the cashews for at least three hours you can boil them for 10-15 minutes. That is what we did last night because I forgot to get them out the night before when I chopped some of the veggies for the meal. This option worked fine for us.

Another tip I have is that if you are planning to make this meal after work get a head start the night before and chop some of the veggies ahead of time. I chopped the sweet potato, onion and tomatoes the night before and it saved me time last night.

The meal itself is very good. We did not add the jalapeno because it would have been too spicy for the kids but if you like spicy food it would be a good addition.

Nutrition for Runners: Asian Turkey Burgers

Tonight’s recipe is one that has become a favourite around here during bbq season. These turkey burgers are a healthier alternative to regular burgers.

To make these you’ll need:

  • ground turkey

  • chopped garlic

  • soy sauce

  • cumin

  • cilantro

Mix these ingredients together in a bowl and make your burgers. Throw them on the grill and you are all set with a great tasting healthy alternative to a bbq favourite.

For an extra kick you can serve them with wasabi ketchup!
