Tonight’s recipe is for a very quick and easy healthy meal. We regularly get filets of rainbow trout to throw on the barbecue. Before cooking I like to mix a little lemon juice, lime juice, olive oil and back pepper and brush it over the filet.
Once you are ready to cook it put it on some tinfoil and place it on the grill. You want to cook it so that it is cooked through but not overcooked. Usually about 6-8 minutes for me.
Although I did not have any to grill tonight, barbecue trout goes well with grilled veggies like zucchini or eggplant.
