Nutrition for Runners: Roasted Beet and Potato Soup


Tonight’s recipe is one I saw posted by Canadian Running Magazine last week. You can find the full recipe here.

I decided to make this soup for dinner Sunday and it turned out to be a great option following a 20 km run in the cold. Not only did it help warm me up but it tasted great!

When making it I almost decided to leave out the potato croutons but was glad I chose to make them in the end. They end up tasting like homefries and made for a tasty addition to the soup.

You’ll note that the recipe says it makes three servings. I ended up with enough to feed my wife and I along with the two kids and had enough left over to take to work for lunch Tuesday.
