Nutrition for Runners: Mozzarella Stuffed Meatballs with Marinara Sauce and Creamy Polenta


Tonight’s recipe is one I put together last weekend. Since it was the weekend and I had more time I decided to make something a little more complicated than what I usually post on here. I got the idea for the meal the previous night when I had the same thing in a restaurant while out with my wife.

To get exactly what I wanted I used three different recipes to put the meal together. I had to search for recipes to help me make the marinara sauce and the meatballs. Having already made meals with creamy polenta I knew where to find a quick recipe for the polenta.

First I started off by making the marinara sauce using the following recipe. This step was very easy. The only work involved was crushing the tomatoes with my hands. Incidentally, you’ll notice that this recipe calls for a can of San Marzano tomatoes. In one of the Canadian Running magazines I read recently San Marzano tomatoes were listed as an item runners should keep in their kitchens.

Next up was the stuffed meatballs. Trying to find a healthier option I came across this recipe that calls for ground turkey.  If you want to make it even healthier you could leave out the mozzarella and the meatballs would still taste good.

Finally, I used this recipe for the creamy polenta. Since I was already making cheese stuffed meatballs I used milk instead of cheese to make the polenta and it turned out just as well.

I was pleased with how this all turned out and will definitely make this meal again!
