I normally post recipes on Wednesdays but since I was too busy yesterday to get this one posted yesterday I am going to post it now. It is a recipe I caught on Canadian Running Magazine’s twitter feed recently.
I made this recipe the other day and we just had this as a meal on its own. It took me a few minutes to get ready to start cooking them because the the sweet potatoes need to be shredded and the cauliflower needs to be mashed before you can start making them. Once i had those two steps complete these were quick to make and cook.
These latkes were a big hit in our house. Both of our kids ate them without any complaints. The leftover mix was even still good for a few more latkes at lunch the following day. I can definitely see myself making these again to have on a day when I am recovering from a long run.
