Tonight’s recipe is my latest attempt at trying a recipe from the Runner’s World Athlete’s Palate cookbook. Based on the success I have had with it so far I would say it is one of the best Christmas gifts I received last year.
I wasn’t sure what to expect with this one before I got started. My wife and I were just scrolling through the book and thought it sounded good. If you are interested you can find this recipe on p. 120.
I wouldn’t say it was a complicated recipe to make but it did take me a little longer than indicated in the book because there were several things to get ready at once and I had not made it before. I think it will be much easier the next time I make it.
The effort was well worth it because the chicken was very tasty and a big hit with the family. Here is a picture of the finished product, as you can see I served it over quinoa.
