Nutrition for Runners: Black Bean and Tomatillo Tacos

IMG_1199I came across this recipe last week when looking for something to do with the tomatillos we got from our garden this year. It was a relatively quick and easy meal to make.

I used the following recipe. It was a hit in our house. It would makes a great meal if you are looking for a vegetarian option or just looking to make tacos.

I followed the recipe with the exception of peppers so it would not be too spicy for our four year-old. I just added hot sauce to my own tacos afterward and it did the trick.
