Nutrition for Runners: Slow Cooker Coconut Curry Chicken

IMG_1195Looking for a new, healthy and not too complicated recipe to try I came across this recipe for coconut curry chicken made in the slow cooker.

Other than using coconut oil instead of Pam to grease the slow cooker I made the recipe as listed.

The only preparation involved was the 10-15 minutes it took me to prepare the sauce and chop the chicken and carrots. Then came the best part, I got to leave it cook in the slow cooker for six hours.

Once finished we served it with cauliflower and naan bread. This is a recipe we will add to the rotation another time.
