Nutrition for Runners: Pumpkin and Goat Cheese Pizza

Tonight’s recipe is a pizza recipe we tried for the first time tonight. As you can tell from the number of recipes I have posted, we like to try different combinations.

This one started off by roasting pumpkin for about 40 minutes in the oven. For the pizza itself, we used
this recipe

Once the dough was ready we brushed it with olive oil then topped with pumpkin and goat cheese. We also included some pecans. The pizza was cooked for 12-15 minutes at 500 in the oven. Once cooked we included the final topping, fresh oregano from our garden.
