Nutrition for Runners: Zucchini Meatloaf

Tonight’s recipe is a new one my wife came up with on her own that we tried tonight. Needing to find a way to use the ample supply of zucchini we have had from the garden this year she came up with this recipe.

To make it you will need the following:

Package of ground chicken
1 large zucchini grated
1 cup cooked quinoa
1 apple grated
1 teaspoon cumin
1 teaspoon ground ginger
1/2 teaspoon cinnamon
Salt and pepper to taste

Mix the ingredients in a bowl then place in a baking dish. Cook it at 350 for 1 hour or when done.

We enjoyed it so much tonight we are going to have it again tomorrow night!
