Nutrition for Runners: Salmorejo

IMG_1039Tonight’s recipe is a new one my wife found here. Essentially this is a tomato soup served cold. It would be a good option for dinner or lunch. We had it for the first time Monday night and I took leftovers for lunch at work the next day.

We didn’t have Serrano ham or prosciutto and did not add a chopped hard-boiled egg but I am sure those would be great additions. We did improvise by topping it with fresh basil.
