Nutrition for Runners: Zucchini Pancakes

Tonight’s recipe a very easy and healthy one to make. It is something I had not thought of having before until we had it tonight and turned out to be a very good meal.

To make these pancakes you will need 3 eggs, 2 medium zucchini, 1/2 cup flour, salt and pepper to taste for the batter then cook them like you would regular pancakes. We served ours with homemade tzatziki or plane yogurt.

As an added bonus for us tonight, our meal was largely locally sourced with the zucchini as well as the cucumbers used for the homemade tzatziki coming from our garden and the eggs from our local farmer’s market.
