Nutrition for Runners: Cinnamon Pearl Barley Salad

IMG_0695Since I didn’t post a recipe last night I am posting one tonight in order to make up for missing my regular post. Here is a recipe we enjoyed last week.

In order to make this you need to cook one cup of pearl barley according to package directions, substituting one cup of liquid for one cup of chicken or vegetable stock and add one tablespoon of cinnamon.

Let pearl barley cool then mix in 1/4 cup of olive oil and one cup of blueberries and one cup of chopped peaches.

Serve and enjoy!

By the way, for those of you with small kids, our three year-old devoured her plate when we made this salad.
