Nutrition for Runners: Quinoa and Pistachio Salad

Tonight’s recipe is a new salad recipe we tried tonight, something my wife came up with. It went great with the bbq skewers we had and you only need a few ingredients to make it.

Cook one cup of quinoa.

In a blender combine 1 cup of mint leaves, 1/2 cup of pistachio leaves and 1/4 cup of olive oil.

Add the mixture along with cut up snap peas to the quinoa.
