Nutrition for Runners: Slow Cooker Lentil-Quinoa Taco Filling

IMG_0561Tonight’s recipe is a new one for us. Tacos are quick and easy to make so it is a meal we have quite often in our house. Tonight we tried a meatless variety. As you can tell from the title, the filling is made with lentils and quinoa. Since lentils are used in the filling it is a relatively cheap meal to make and for those of you who don’t know Canada is a major producer and the leading exporter of lentils so eating lentils is a great way to support Canadian agriculture!

If you are interested in trying this recipe my wife used the following recipe. She did make one change to the recipe. In order to give it a little more spice she used this seasoning recipe instead.

Once you have the filling ready top them as you see fit. Although they are sometimes harder to find, we prefer to use corn tortillas instead of flour tortillas.

The meal was a big hit in our house tonight. Our three year-old cleaned her plate and I already have leftovers packed for my lunch tomorrow.
