Pad Thai is one of my favourite meals. Unfortunately it is not always the healthiest meal. I was quite excited when I found this recipe for a healthier version. My wife and I finally got around to trying the recipe last week. In fact we liked it so much we made it twice!
The first night we made it using rice noodles because we did not have a spiral vegetable cutter. Since we enjoyed it so much the first night we went out and bought a slicer a couple of days later so we could try it with zucchini noodles instead of rice noodles. We both enjoyed it even more with the zucchini noodles.
We will definitely be making this recipe again.
