Nutrition for Runners: Roasted Squash and Quinoa

IMG_0465Tonight’s recipe turned out to be a great way to use up leftovers from last night. Last night we made this recipe and had plenty of roasted squash leftover to use for another meal.

If you want to make this recipe cook one cup of quinoa then add 1 tbsp each of cumin, coriander, ginger, 2 cloves of crushed garlic, 3 tbsp of olive oil and salt to taste.

Add in your roasted squash and it is ready to eat!
