Nutrition for Runners: Lamb Curry With Peas

IMG_0433Tonight’s recipe is one we tried for the first time the other night. It is one we will definitely have again. If you like Indian food this is a good option to try and it was not difficult to make. The recipe comes from the One-Dish Meals insert that was included in a recent edition of Canadian Living Magazine.

To make it you will need the following:

  • 1 tsp oil
  • 1 lb of ground lamb
  • 2 onions finely chopped
  • 2 cloves of minced garlic
  • 1 tbsp of grated fresh ginger
  • 1 tsp of ground coriander and ground cumin
  • 1/2 tsp cinnamon
  • 1/4 tsp cayenne pepper
  • 1 can diced of tomatoes
  • 1 cup of frozen peas
  • 3 tbsp of fresh mint

Heat the oil over medium heat then cook the lamb until it is no longer pink. Add the onions, garlic, ginger, coriander, cumin, cinnamon and cayenne pepper. Cook until onions are softened. 

Add the tomatoes and cook until almost dry. Stir in the peas. Remove from heat and stir in 2 tbsp of the mint. Transfer to a serving dish and sprinkle with remaining mint.
