Nutrition for Runners: Potato, Kale & Sausage Soup


Tonight’s recipe is a new one for us. The recipe my wife used came from this blog. We tried it tonight and it was a big hit. Not only does the kale provide many health benefits the soup also has turmeric which has anti-inflammatory properties.

Since we were short on potatoes my wife added one cup of pearl barley and it worked fine.

As mentioned this soup was a big hit in our house today. We will definitely add it to our rotation, especially during the fall and winter.
