This week’s recipe is another slow cooker recipe. As an added bonus, this Coconut Curried Chickpea Stew can be prepared for less than $5. It’s nutritious and affordable!

It is also a vegan meal so it is a good choice whether you are vegan, vegetarian or just looking for a meatless option.

The recipe also fed my wife and I along with our three year-old and left us with plenty of leftovers for lunches and other meals during the week.
