Nutrition for Runners: Pine Nut, Basil and Balsamic Dressing

Tonight’s recipe is another that is easy and quick to make. It is a good one to enjoy this time of year when fresh tomatoes are in season. The recipe for the dressing comes from Jamie Oliver.

As you can see from the link above all you need to make this one is garlic, basil, pine nuts, olive oil and balsamic vinegar. You also need a mortar and pestle to mash up the small ingredients, or a small food processor.

Once ready we like to serve this dressing over tomatoes and bocconcini cheese. I will post pictures tomorrow night once we have had a chance to make it again.
