Nutrition for Runners: Spaghetti Sauce with Zucchini

Tonight’s recipe is one my wife came up with on her own using ingredients from the garden once again. This time the tomatoes, oregano and zucchini came from the garden.

To make it you will need the following:

  • 2 small zucchinis grated
  •  handful of tomatoes chopped – enough for approximately 3 cups
  • 1 can tomato paste
  • half teaspoon oregano
  • two tablespoons of honey
  • two tablespoons of olive oil
  • 2 cloves of garlic chopped
  • 1/2 teaspoon of marjoram

Cook the zucchini and tomatoes first in a pan with olive oil. Once they have started to cook add the other ingredients. Let it cook on medium heat until it starts bubbling.  f
