Tonight’s recipe is a healthy take on fish and chips my wife and I found a few years ago. Instead of frying in oil everything is baked in the oven.
To make this recipe you will need the following:
- a dash of ground white pepper
- a dash of garlic powder
- 1/2 cup of bread crumbs
- 1 egg white
- pollack fillets
- 2 tbsp of flour
- 2 large sweet potatoes cut lengthwise
- 1/2 tsp paprika
Mix 1/4 tsp paprika, pepper, garlic powder and bread crumbs.
With a fork lightly whip egg white in a seperate bowl. Add milk and blend.
Coat baking pan. Dip each piece of fish into egg white and coat evenly. Coat each piece with bread crumbs and place in baking pan.
Coat another baking pan. Mix remaining 1/4 tsp of paprika with flour in a paper or plastic bag. Add sweet potato wedges and toss. Place potatoes in baking pan bake at 450 for 10 minutes. Add fish in the oven and continue baking for another 10-15 minutes or until everything is golden brown.
Serve with malt vinegar!
