Nutrition for Runners: Couscous Salad

Tonight’s recipe is one my wife came up with last night for dinner. It is another easy recipe that can be put together on short notice. For this one you’ll need the following:

  • 1 1/2 cup of vegetable stock
  • 1 cup of couscous
  • 2/3 Tbsp of olive oil
  • 1 Tbsp of dijon mustard
  • 2 medium tomatoes chopped
  • half an english cucumber
  • 1 Tbsp of lemon juice

To make this bring the vegetable stock to boil then remove it from the heat. Add the couscous and let it sit for 5 minutes. Mix in lemon juice, mustard and olive oil. Finally, add the tomato and cucumber when you are ready to serve.
