Nutrition for runners: Potato Pancakes

Tonight’s recipe is a good one for either breakfast or dinner. In fact it is what we made for dinner tonight.

  • 3 large baking potatoes
  • 2 eggs
  • 1/4 cup of flour

Mix ingredients in a big bowl. Add flour little by little until they start to stick together.

Cook on a grill and serve with apple sauce or sour cream when ready.
