Recipes for Runners: Tofu Stir-Fry

 

 

As mentioned last night, tonight is the first of a new feature on here. We all know that good nutrition is an important part of training. Each week I’ll post one of my favourite recipes.

Tonight’s recipe is one that has become a staple in our house over the past couple of months, a tofu stir-fry recipe my wife came up with…

2 tbsp Peanut Butter
2 tbsp Soy Sauce
1/4 cup Water
1 tsp Brown Sugar
5 cups of Vegetables
2-3 tbsp Sesame Seeds
1/2 package of Tofu

Toast the sesame seeds in a frying pan then add  tofu, sauce and vegetables. Cook until the vegetables are bright green, tender but still a little crunchy. Add an extra 1/4 cup of water while frying if needed.

In case you need more encouragement to try this recipe, my two year-old’s comment while eating it tonight was “it tasteses good!”
